Spanish cuisine is tremendously varied from region to region. Andalusian, Basque, Catalan and Mallorcan dishes do have one thing in common though: lots and lots of olive oil.

Grilled Artichokes
in Olive Oil with Crisp Bacon


Serves 4

Ingredients


  • 10artichokes, cut in half
  • 4 gfine salt
  • 150 gSpanish bacon
  • 1sprig fresh parsley
  • Juice from one lemon
  • Arbequina extra virgin olive oil
  • Water

Preparation


1. Peel artichokes with a small paring knife, removing all but 6 cm of the stems. Remove outer leaves and cut artichokes in half lengthwise. Marinate artichokes in water containing the juice of half a lemon and coarsely chopped parsley.

2. Place artichokes in a jar. Season and pour on olive oil.

3. Preheat oven to 100°C VarioSteam® at the highest steam setting. When the oven is hot, place the jar of artichokes inside and steam for 90 minutes.

4. In the meantime, wrap bacon in cling film and freeze at -22°C for 1 hour. Then remove cling film and slice bacon very thinly. Preheat oven to 140°C. Place bacon slices on a baking sheet between sheets of baking parchment and bake in the oven for 20 minutes or until bacon is crisp.

5. Remove the jar of steamed artichokes from the oven. Let cool for 10 minutes, then open carefully and drain.

6. Heat Teppan Yaki to level 7. When hot, grill artichokes for 2 minutes. Arrange on plates, alternating artichoke halves and crisp bacon slices. Garnish with fresh parsley.

Grilled Caramelised
Salmon


Serves 4

Ingredients


  • 4serving-size pieces of fresh salmon
  • 100 mlsoy sauce
  • 100 mlmirin
  • 50 gsugar
  • 20 ginstant thickening powder
  • 3spring onions
  • 100 mlArbequina extra virgin olive oil

Preparation


1. Remove skin from salmon and cut into 4 square pieces, saving the remainder. Place griddle plate on the induction hob and heat to level 7.

2. Rinse spring onions and cut in half lengthwise. Brown onions on both sides in a little olive oil and set aside.

3. For the marinade, pour white wine into a saucepan and heat at level 8 until it boils. Add soy sauce, sugar and instant thickening powder. Boil while stirring until the mixture becomes creamy. Add olive oil while stirring constantly. Remove pan from heat and set aside.

4. Using a silicone brush, brush salmon fillets with sauce. Preheat grill to level 7 and grill salmon fillets for 3 minutes on each side, occasionally brushing on teriyaki sauce so that the salmon will be well caramelised.

5. If the fillets are too thick, finish up by cooking them in the oven for several minutes at 160°C CircoTherm convection.

6. Serve salmon with spring onions.

Flan with Olive Oil


Serves 4

Ingredients


  • 250 mlsemi-skimmed milk
  • 35 mlArbequina extra virgin olive oil
  • 50 gsugar
  • 3eggs
  • 1/2cinnamon stick
  • Orange peel from 1 orange

Preparation


1. In a saucepan, combine milk, orange peel and cinnamon.

2. Set the induction hob to level 7 and bring mixture to a boil. Switch off hob and remove pan from heat.

3. Cover with tin foil and let stand for 10 minutes. Then pour milk through a colander.

4. In a bowl, beat together eggs and sugar thoroughly. Gradually stir in flavoured milk. Add olive oil and stir well.

5. Place a roasting pan with a steamer insert on the induction hob and add 1 litre water. Place rack on top and cover. Set induction hob to level 8 for 5 minutes. When the water starts to simmer, reduce heat to level 5.

6. Pour milk mixture into small glasses. Seal glasses with cling film and heat in the covered steamer for 30 minutes.

7. Carefully remove cover, take out glasses and let cool.

8. Serving suggestion: Garnish with whipped cream and grated orange peel.
