I am getting a stuffed crown to feed about 10, and I had planned to turn it over to keep the meat moist and then turn it back for the last half hour - no foil - cooked at 165. In particular re whether to cover a turkey with foil in the circotherm oven until the last 30 mins. At 2 demos I attended the economists were adamant that you do NOT use foil until the after the turkey has browned and said they would raise this issue with you. Grateful if you could review my previous questions and respond. Only 2 weeks til Christmas!
